bye bye heart burn!,monday weigh in, and recipes for the day.

Monday! I used to dread Mondays. Since I've joined a fabulous support group on FaceBook, I actually look forward to waking up and saying "It's Monday!" ... a Fabulous lady Jamie, the creative creator of http://blog.yourlighterside.com/ also has a FB page... where she shares recipes,links, and support. She's WONDERFUL! Anyway, she came up with an Awesome idea.... Mid Year Resolution. The idea is basically, loose the weight BEFORE New Years Eve. I mean, seriously, how many of us have said I'm going to loose weight starting New Years Day? ... aaaaaaaaaaaand let's be honest, how many of us have lasted only a few days? *GUIIIIIIIIIIIIIIIIILTYYYYYYYYYYYYYYYY* So, she devised a plan where all of us who were interested in loosing a certain amount of weight (we all decide our own goals) ... team up, and support eachother. GREAT IDEA! I absolutely adore my group. we talk about everything... and support eachother, share recipes, etc. Today is weigh in.. hence the opening to today's entry ;) Last Monday I was 171.8 Today, i'm weighing in at 165.0! 6 pounds gone!!!! Yaaaaaaaay!!


Now .. onto something interesting. After an endoscopy, i was diagnosed with severe GERD. Gastro-Esophogeal-Reflux-Disease. It's NOT FUN, and very painful. ;/ Prior to changing my eating habits, I would wake in the middle of the night, with my hiatal hernia feeling like it was trying to come out of the back of my throat-always gagging and choking (very scary feeling)... chest would be so full of gas, and hurt, i'd panic thinking every time "is this a heart attack?"... and the burning was so awful... then when i'd eventually throw up, the stomach acid was so strong , that i'd literally cough up blood in the end. the 600mg two times a day...of meds (basically Zantac-but Rx) was of no help. Wouldn't you know, SINCE I've been on LC, (low Carb) all symptoms have subsided????? Hurraaaaaaaaaaaaay. yet ANOTHER HEALTH reason to support why low carb is good for you ;)


Recipes.... I'll have to write back on this one, after I return from dropping my lil guy off at school. I will be posting the recipe for Jalapeno Poppers ... and still need to decide what i'm making for dinner tonight! As for last night (the plan to make bbq sauce) fell through... i just wasn't hungry... So, instead.... I decided to clean out my freezer... my kids enjoyed that. I made all of the kid foods for them (not as their dinner.. just a snack) Now, when i open the freezer, i dont have pizza bites, french fries, and empenadas staring me in the face.. which will benefit my weak moments tremendously!

I'll be posting the recipe for these delicious treats in a bit ;)

you will need:
STUFFED JALAPENO APPETIZER

8-10 large jalapenos cut in half long wise
2-8 oz. cream cheese
1 cup colby jack shredded cheese
1tsp minced garlic
1/2-1tsp salt *salt also brings out the heat.. be careful ;)
1 package of bacon (I used turkey bacon) WATCH FOR SUGAR in flavored bacon!

Preheat oven to 450*F
cook bacon to crispy.
mix all ingredients except bacon colby jack and peppers.
Take the cream cheese mixture, and fill the peppers with it.
top with shredded cheese and bacon.
Bake for about 30 minutes.

A Thanksgiving Dinner LOW CARB STYLE (recipes)

COFFEE- is enjoyed with DaVinci 0carb 0 caloie flavoring, and a dash of cream

Hot Apple Cider- Bigelow Apple Cider tea, with a dash of splenda.. Just like the real thing <3

Whipped Cream

Simply Whisk together with a hand mixer- Heavy whipping cream, splenda (and optional-Any flavor DaVinici Sugar free syrup)

Cranberry Jalapeno relish

*~*
1 pound cranberries (Cover the pot.. these bad boys Pop like popcorn..you don't wanna get any of the hot juices on you or in your eye -.0 *ouch*
3/4Cup DaVinici's Sugar Free Pineapple Syrup
2Tbs Lemon Juice
1/4 cup minced yellow onion
2 jalapeno peppers finely chopped ( I add the peppers and onion together and mince in the food processor)
1/2 to 1Cup of Splenda.... depending on your preference
1Tbs Orange zest
2/3C Sugar free Orange Marmalade
1-2Tbs Minced garlic depending on your taste preference

Add Pineapple Syrup,lemon juice,orange zest,minced garlic,sugar free orange marmalade,onion and peppers to a Large pot with a lid.... bring to boil... Add Cranberries, stir well, cover with lid, and simmer until cranberries are soft... gradually add Splenda,1/2C at a time... tasting and stirring every 10 minutes as the flavors will Gradually incorporate with eachother... remember!--- You can ALWAYS add more, much harder to Take away ingredients ;) Once you have the desired taste, allow to simmer covered on VERY low heat for another ten minutes... remove from heat, allow to cool, then cover and refrigerate. Serve as a side to Poultry and shrimp :D
*I usually cook mine for about an hr. The final product should have the consistancy of stew .... as it cools, it will thicken.

*Mashed Turnips with Sour Cream and Chives


You will need:
1 medium White turnip (the color ironically is purple and white) lol!!! DO NOT use wax turnips. They have a little more starch
1/2 to 1Cup Sour Cream
1/3Cup Minced Fresh Chives
Chicken Boullion Cube
salt and pepper to taste
Butter (if you like ur "taters" buttery ;)

Bring a medium pot of water to boil... add a Chicken Boulion Cube
Using a peeler (or knife) remove the skin off of the turnip.
Dice the turnip and add to the water.
Boil until tender
Drain VERY VERY VERY well. the water they still have, the messier they will be. I let mine sit in a collander in the sink for 15 minutes... then transfer to paper towels, and squeeze out excess water. IT'S WORTH IT!<3 Once the excess water is gone, Transfer turnips to a medium bowl, add sour cream,salt,pepper and chives. I find it easier to use a Hand mixer- Blend everything together... to your desired texture. YUM!
*Cornbread~ish stuffing with sausage and spices*





I'm not gonna lie.. this dish took me a WHILE to make, but in the end, it was SO WORTH IT!

First step-MAKE YOUR "CORNBREAD"
*Note... this is seasoned to coordinate the flavor of the stuffing.
Ingredients-
3 1/2oz Almonds (Ground finely in a food processor-also called almond flour)
1.5oz Melted butter
2 Lage Eggs
1/2tsp baking powder
1/4tsp salt
1/4C Splenda
1tsp ground sage
1/4tsp celery salt

whisk eggs, add melted butter, then add the rest of the ingredients with egg and butter mixture. Spray a 6 inch microwave safe plastic container with cooking spray..and pour batter into it. Microwave for 2 minutes on high power. Let sit for 5 minutes..

NEXT STEP
PreHeat oven to 450*F. Remove cornbread from container. Cut it into 1 inch cubes. spray a cookie sheet with butter spray... place cubed corn bread on cookie sheet. spray the cubes with cooking spray (so they brown up nicely) then sprinkle generously with salt pepper and ground sage. Bake about 10minutes. Keeping a Watchful eye on them so they do not burn. take out of the oven, turn them over, and bake again for another 10-15 minutes, until well browned. They should be look almost like a cube of toast. When finished, remove from the oven, and set aside.

Preheat oven to 350*F

Next Step...
Meat mixture

You will need:

2 pounds Hot italian sausage
1 pound white mushrooms mushrooms
3 ribs celery
1 chopped onion
3 tsp dried sage
2 tsp Poultry Seasoning
1/2 teaspoon pepper
1 1/2 cup grated Parmesan cheese
4 eggs
reserved cornbread cubes

FIRST- remove the casings from the sausage. In a heated,oiled skillet, add sausage meat and allow to brown. While it's cooking.... gather your veggies!

Next-
Add your veggies to the food processor (or mince finely with a sharp knife if you don't have a food processor) Transfer your finely chopped veggies to a Large bowl, add the 4 eggs,mix well...set aside.

Sausage- Drain the grease from the pan, and either fine mince with a knife, OR put it in the food processor, and grind to very fine bits. Add the sausage to the veggie and egg mixture. Add the Parmesan cheese and spices... stir in the cornbread cubes. Mix well. Pour stuffing into a greased baking pan, and bake in a 350*F oven for 30 minutes.

SUGAR FREE LOW CARB CRUSTLESS PUMPKIN PIE SOOOOO MOIST AND ABSOLUTELY DELICIOUS!




You will need:

3/4 cup Splenda
2 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1tsp teaspoon ground cloves
2 large eggs
1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
1/4C Heavy Cream
*Optional, but adds a devine flavor*--> 1/4C DaVinci's Sugar free vanilla syrup


Directions

MIX splenda,cinnamon,saltground ginger, and ground cloves and heavy cream with the pumpkin. If you have Sugar free Vanilla syrup, add that too! ;)if not, it's ok. This is usually when my 5yr old and i taste test :p If it's too salty, add tsp at a time of splenda until your desired sweetness.

Pour mixture into a greased pie plate.

BAKE in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours.



CHOCOLATE CHIP COOKIES!


you will need
1 1/2Cups Almond Flour (blanched almonds processed finely in processor)
1 tsp. baking soda
1 bag Hershey's Sugar Free Dark Chocolate mini bars chopped
1 egg
1/4Cup Sugar free Vanilla Syrup (DaVinci's)
1/4Cup Splenda
1/4 stick of butter, melted

Preheat oven to 350*F

Process the Almonds to an almost flour consistency. *NOTE* I have made this recipe using both blanched and unblanched almonds. I HIGHLY recommend using Blanched (The brown skin removed on the almonds) it makes for a much prettier cookie, and grinds up much easier and finer in the food processor)

Next-transfer the almond flour to a bowl, and add the dry ingredients to it. mix well. Add the remaining ingredients. Allow to sit for a few minutes to "thicken up" a bit.

Then- drop dough (will be wet and sticky) by the spoonfull onto a Greased cookie sheet (I cover my cookie sheets with tin foil, then spray with cooking spray). A Traditional cookie sheet will hold 12 cookies... this recipe generally yields 24 cookies total :) Put in the oven, and bake for about 15-20 minutes. Remove from oven when they are a golden brown. Transfer to a cooling rack..allow to cool and ENJOY! *************BUT REMEMBER... they are made with SUGAR FREE CHOCOLATE AND NUTS!... anyone sensitive to nuts/sugar free candy should be careful as too many can have a laxative effect ;)

More recipes to come... for now, i'm Hungry after reliving the memories of Thanksgiving haha. I'm gonna make some bbq sauce and toss in a crock pot with some chicken... it's been a while!!!!

UPDATE! July 2011 weighed in at 196! Today, Sunday, December 4,2011...after being on low carb (on and off in August,Sept, and up til a week before Halloween.... Steady from week b4 Halloween with 3 cheat days up until today, I AM NOW 166!!!!!!!!!!!!!!!!!!!!!!!! have about 30 more pounds to loose, then gain Hopefully 10/15 pounds in toned lean muscle.... GOAL-Lean 146 by February when we go to Disney! I went from a size 16/18 to 9/10 which is kinda snug... but hey! I can button and zip them and GET THEM OVER MY HIPS! ooh how i've missed my jeans!!!! Ya know, you don't have to miss out on the good stuff.....

They had-turkey with gravy...I had Turkey w Heinz Classic Turkey gravy w added mushrooms Did i miss out? Nope They had Stuffing (bagged/homemade kind)..I had Homemade LC stuffing Did i miss out? Nope

They had-Cranberry Sauce...I had SF/LC Cranberry Jalapeno Relish Did i miss out? Nope(and they enjoyed my cran jalapeno relish!) They had-Butternut Squash I had..Butternut Squash Did i miss out? Nope. They had-Pumpkin and apple pie ...I had SF/GF/LC Crustless Pumpkin Pie SF/LC Choc.Chip Cookies Did i miss out? The following day, I helped myself to left overs, and noticed, i had some left over jalapenos in the fridge.. so, i decided to make jalapeno poppers!

cheat day/weigh in day...finally decided.. TOM/Ovar. Cysts.. *GIRL BLOG*

Alright, so.everyone is human. I think? HAHA... i have decided, that IF i'm to have a cheat day, it will be Saturdays, followed by a weigh in on Sunday. This way, if i DO cheat, i won't go overboard...and be more aware of what and how much i'm eating..that i shouldn't eat.. and will ask, IS IT WORTH IT? Yesterday, I made the Terrible mistake of over doing it with the coffee, and not eating food, before Tyler's (WINNING 14-2) Playoff game... so, by the end of the game, i was Starving..and my bff,the kids and I went to Hibachi. NEXT TIME i will attack the salads and protiens..not the other crap, as .. that's how i feel today..LIKE CRAP.. more guilty, than hung over. Regardless, the scale only went up a pound.. and i was smart enough to keep my "gurdle" on, with my somewhat tight (meant to be that way) Jeans... I could feel my belly quickly fill with the junk, and knew when to stop vs.. going to a buffet, with the usual elastic waist pants...and just eating til i want yo blow.
Last night however, i know i burned the Calories, or..some of them anyway, as we (bff and I) sang a lot of karaoke *HELLO AB WORKOUT*! and some Dance Central.

As for today, dunno WHY? could be the junk that i ate, but... i mean..TMI WARNING* I am on the pill... I have ovarian cysts... I used to get terrible TOM's... now it's somewhat under control, but i've noticed, lately, that the cyst has been acting up.. feeling.. full, and painful, with random spasms somewhere in that area.. painful.. but also..feels like a baby kicking almost? Well, Now, I wake in the middle of the night last night, with aweful cramps and a pop feeling.. i was so tired, i didn't think anything of it, but today.. i now have terrible cramps, and bleeding :( Did the junk contribute? Who knows.. I do know however, i'm hurting today. so, gonna have to wait it out, and see if it subsides otherwise,i have to call the dr. *shudders*

PICTURES shrinking in 4 months. PIX

so..have yu ever been dropping the lbs... and need some inspiration bc the scale shows, but when ya look in the mirror, that tiny voice in your head says... you don't see it... it's not worth it.. Grab the Junk.. just do it? Well, i decided to shut it up, and compare pix. byt the end of this month, i expect to see major differences..... beings i was 200, and now 169ish. so, for now, this will do :)



SO... ROUGHLY 40 POUNDS.. MAYBE 35... lost. with yo yo~ing. still, not to shabby. yes, i fell of the wagon a few times, but i jumped right back on, and i'm still loosing! Last night was so hard for me, as it was emotional night,,, and all i wanted to do was attack the pringles. But, stuck to my guns, and dicipline. Side note, for anyone Not LC'ing... if you're like the others who say just eat a handful...you'll be fine.. NO, I won't. I have an addiction to food, and i binge, even when (and ESPECIALLY WHEN) i am not on low carb....and i can't eat Just a handful. I am not to that point yet. For now, I am learning to love myself, and discipline myself, and when i'm at goal, it will be Then, that i start bringing the "normal" foods back to my daily diet. I have to say though.. I have friends not in our country... and they don't eat all the trash, and poison that we here in America eat. We as a whole, in my opinion are a very glutonous group of people. No where does it say that chips and candy are nutritious, or that we HAVE TO INCLUDE IT IN OUR DAILY DIETS. NO WHERE DOES IT STATE that when at a buffet, we need to go up to all 12 tables over and over and over again... we were just brought up that way... it is so unhealthy. Yet, these are the people that lecture and tell those who are trying to detoxify ourselves, and eat greens, and lean meats, and LOW CARB wraps and breads in MODERATION, that we are wrong? To "JUST EAT IT"... if THAT food is so good for you, then, answer this.. why is it, that after a day, or even..Meal of eating mashed potatoes, with butter... and starchy peas, and texas toast, and a hefty helping of lasagna,... do the ones who do not eat it on a daily basis, grow sick? stomach aches, headaches, chills, vomiting even? Because OUR bodies have grown accustomed to the HEALTHY vegetables, and high fiber pastas, and the cauliflower, and the asparagus and brussel sprouts.
I often sit back, while being lectured, and wonder.. WHY? Why do the non lc'ers get so ANGRY? Perhapps they simply do not unerstand? or, is their frusterations geared more towards their tipping scales?, as they watch us bettering our bodies? our skin glowing? our clothes falling off, waist lines,arms,legs, everything shrinking before their very eyes?... are they actually frusterated with themselves? and their doubts in self discipline and life style changes? Perhapps. I will say this much, I was once them... shoveling the tasty cakes, chips,pretzels,dips, over excess of Crap down my throat... for me, it was bc of an abusive relationship with food.. i didn't feel complete, unless we were together, and i was tasting every bit of what was before me.. and if it wasn't near me, i would feel worse... and go find it, and eat double what i would before! HOWEVER, not ONCE did i EVER lecure yell at or tease people who were eating differently... I wanted to change... and i made a HUGE change with myself. and I'm very proud of myself for doing it! I wish that those out there though, who disagree (for whatever reason?) with MY choices in what i put into my body, would kindly Shaddup! They do not understand, we are not sacraficing, or giving up our favorite foods, we are simply modifying it... to be healthier. better cholesterol, less aches and pains, better skin,hair,everything!.... So, tell me again......... what is so wrong with how i'm choosing to live? I could go on and on ... but i wont. (for now) Anyone else going through this? Any of you struggle with friends who do not understand low carb? Anyone TIRED of explaining? and Arguing??

helloooooooooo i am having posting issues today :/

So... I think i finally figured out how many carbs i can have, and still manage to loose/maintain but Not gain! I have managed to stay between 174-177.. Now it's time to hop back in the driver side, hit the cruise control and coast down to the 160s!

I recently got a new game.. Dance Central.. .AMAZING.. for kinects. holy heart rate batman! i have also been walking ... because the temp is perfect!...... minus the random monsoons, noah's arc cruising down the street, and soggy stinky boy feet everywhere... it's not half bad.

ummmmmmmmmmmm, yeah.. see that thing???IT'S ALIIIIIIIIIIIIIIIIIIIIVE!  I swear.. i was walking past it the other day, and it turned and looked at me, and with a deep loring yet scary clear your throat voice, said.. "HEY!!! HEY YOU!! YEAH YOU.. C'MEEEER!"  all i could think was... AUDRIE TWO!  RUUUUUUUUUUUUUN  Eeets gonna eat meeeeeeeeeeeeeeeeeeeeeeeeeeee!!!  ROFLMAO.... mkay.. well, maybe it didn't yell at me... but it's surely big enough to!!!  Like.. some alien life form beamed down it's creepy grow ray gun ...and said.. GROW...

Why is my font shrinking???    Maybe I inhaled the fumes of this creature while it was being hacked by the lawn mower... and the shrinking font is just in my head?  hahaha nooooo.. i just need to figure out how to edit i guess.    Well........... i'm going to study some words... a friend of mine lives is Istanbul... and has been helping me with some words... and it's so much fun! :D
