WOW been a while. :/

WOOOOOOOOOOOOOOOAH! so... sorry i haven't been around.. a lot has happened with the health in my family.. from flus to tonsil/adenoidectomies... NOT FUN!   aaaaaaaaaand i sooo fell off the wagon.. but i'm happily back on it... excited and determined..    i can't Wait to bring the flaxseed meal crackers with me to the next few gatherings my family and i attend... i also found a Yummy recipe for almond cookies and crackers... I think i'm gonna play with my food... and throw my favorite flavored almonds (blue diamond Rocks!0 into the food processor...and turn my nuts into crackers.  yummy! OOOOOOOOOOOOH! yesterday, i made the boys and i wings...


 HOLY DELISH!   lemme tell you the buffalo wings put a local wing place around here to shame...Which reminds me.. i have to make more for the hubby.. he's working in NYC today... doing "center stage" :shrug:      I wish i took pics of the garlic bbq wings... i found a ZERO carb bbq sauce... (forget the name, but will get more on thursday... and post the name if i remember!)  it tastes a lil like a moraccan sauce actually..  very good!  

Don'tchya hate when you buy ingredients for recipes ... then you forget what you were gonna make.. and you have random strange ingredients laying around?  yeah... that'd be my low carb cabinet! full of RANDOM stuff...  i think i'll google my ingredients.. or search them  on lindas website... that's most likely where i got the ideas from anyway hehehe

well...... i guess i should start rummaging through the cabinets and see what i have...... and start planning dinner...  can' wait to go shopping again thursday! MUCH NEEDED!   saw a recipe on the lighter side....   she has bacon meatloaf croquetts! YESH PLEASE!

soooooooooooo.... after nommin away on the flax~ers (flaxseed crackers)... i realised i needed a meal.. sooooooooooo i made a cilantro lime ranch chicken cheese steak No bread.. YUM!... btw... back on the flaxers... Lemme just say... i let them sit out a lil longer... and WOW! they crisped up so nicely...  i found myself continuing to munch on them as i was putting them away... so good i actually felt a lil guilty eating them.. like i was non carbing or something haha...   OH! and the cream cheese and jalapeno on top? MMMMMM!

OOPS!  i just realised i didn't get on the treadmill today! eeek!   well, lets see... i had an atkins dark chocolate royale shake(2), flaxers(6), Strawberry crystal light(o), half a diet coke(o), one cup of coffee(1), the cheesesteak(<1)  (didn't eat much of it... just enough to not be hungry)  hmm... about 10 NC for the day... i'm supposed to have 20... i think i'll search around for a cauli meal... that way i will know i'm gettin my veggies....   i'm really hurtin on my staples ( cream, cheese, meats, produce)... IS IT THURSDAY YET? OH..not to mention..  i get to go xmas shopping for the kids! (must pack shakes and bars in the purse that day!)   peeve.... when i'm at walmart, or target... and i smell the Yummy popcorn and pizza      *MUST TRAIN THE NOSE TO SAY BLEGH!* I MEAN... i can still eat that stuff.. but only if i make it.. ya know?   back on the treadmill... i think i'll get on that beast after the kids are home from school..... maybe even while dinner is cooking.... AGH! gotsta search for what to make.. grrrrr  ok   will update on dinner later.  tataaaaaaaaaa


eh... stil no idea what to make for dinner....   i think i went a little over board with the air popped popcorn (pssst... if ur in induction do Not eat it!)      oh well.   im gonna enjoy my vodka and diet... and ponder what to make.... Dear Lord... please bring Thursday here SOON! i have NOTHING IN MY HOUSE! k thanks

FOOD PORN

Fake~ITOS!




* Shredded Cheddar Cheese
* Your Choice of spices




Preheat frying pan to med heat
      ... grab a Hearty handful of shredded cheddar cheese and spread it EVENLY in the frying pan...      DONT PLAY WITH IT!!!!  just keep a watchful eye on it... after about ten minutes, carefully remove it ou of the pan, and place on a cutting board... cut into 8-10 "corn chip" slices.... season with your preferred spices... I USED Kernel Season's Popcorn seasons...nacho cheese works nice Or white cheddar ...and for an added kick..i also added Weber Chicago Steak seasoning...    the flavor reminded me of the mystery flavor doritos.. hat tasted like cheeseburgers! (i for one Loved those!!) of Course, you don't have to add the steak stuff...   but get creative!  and remember NO SUGAR!  you'd be surprised how many spices have sugar in them! ;)

smoked chops n cabbage soup


ok.. I know a Lot of you cringe at the thought of cabbage.. SO DID I till i threw this all together in the crock pot.. my boys even like it!

*small cabbage, rough chopped
* chicken broth (3 cans)
* one small onion chopped or sliced (depending on ur preference)
* smoked pork chops (i use smithfield)
* Fresh(or ground/dried) garlic and pepper to your taste
* SMALL amount of salt.. to taste... remember the pork has LOTS of salt in it.


   EASY PEASY!  prepare cabbage and onion.. throw all of the above ingredients into a crock pot or large soup pot... stir every hour or so  (or let it be if using a crock pot) and cook for at least 4 hours.  YUMMY!


TACO SALAD


*ground beef... ( season w cumin,chili powder,paprika,garlic,salt,pepper,onion powder to ur liking)    


~TACO SEASONING PACKETS SOMETIMES HAVE SUGAR IN THEM  you HAVE TO READ THE INGREDIENTS!  this is why i just choose to make my own seasoning. ;)


*shredded cheddar or monterey jack .. colby jack... jalapeno cheese... pick one.. pick all... u get the picture ;)


*  one raw tomato chopped 
* Serving of olives.. is 5... so... if ya want olives... after you make ur taco salad for urself... pick either green or black.. (or both) but KNOW that a serving in induction of olives is 5... i like to chop them up very fine.... goes further that way ;)
*sour cream
*Hot peppers if ya want... 
      again.. be creative... but NO QUESO and NO CHIPS!   



pretty self explanatory... layer everything over a bed of shredded lettuce and enjoy!


CREAMY HAVEN


* 3oz creamcheese softened
* Crystal light packet (whatever your favorite flavor is... lemonade is delish!)
  
mix with a hand mixer until smooth and fluffy     the variations here are infinite..


Faux Mac n Cheese!


even if you're not a fan of cauliflower... but you're being good with your veggies.. At LEAST try the cheese sauce!    clicky clicky

FLAXSEED MEAL CRACKERS! AMAAAAZING!

*from about.com

1 cup flax seed meal
1/3 cup Parmesan cheese, grated
1 and 1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 cup water*

WHAT I DID...........----->preheat oven to 400... mix ingredients.. spread thin about 1/8th inch on greased parchment... make sure edges aren't too thin, or they'll burn.. Bake for 15-25 minutes depending on thickness you've rolled them out to be.. watch them after 15 minutes for burning! remove from oven... i used a pizza cutter... cut them up, put them back in the oven to finish crisping (to dry out).... HIGH IN FIBER! DO NOT EAT TOO MANY! lol

*i substituted 1 and a half tsp italian seasoning w a lil salt and omitted the garlic powder and salt as noted above.. other people posted that the original recipe was too salty. my batch came out great! YUM!
