day 14 of induction... AMAZING FOOD DAY!

well, today marks 14 days of induction...and i feel fabulous!!!!    Currently, i am making chicken alfredo w broken up dream fields lasagna pasta (i'm out of the good stuff)..and tonight.. i think i'm making taco burgers.. OR..thanks to the magic of Xantham gum.. i might make meatballs w beef gravy...orrrrrrrr meatloaf..mmm yep.. i think i'll make meatloaf w gravy, mashed cauli...and string beans! yaYah!  OH! AND... received an email to day that Ritas by me opens MARCH 3RD!!! HAPPY BDAY JENNI!  my fave is sugar free tangerine.. sooooooooo yeah... i'll be right therrrrr waiting in line in 42* weather with a big ol'grin! :D well.. gonna dish up lunch... i'll be posting later... today's been all over the place but in a good way. :) *mentally, that is*  bbs!!!! <3

OOOOOOOOkay.. so.. as my ketosticks proved... dreamfields set me back a little.. but that's ok.. i'm still in ketosis!   Lunch was SO SO SO good!     NOW DINNER.... MMMM!   sour cream and chive mashed cauli, string beans, meatloaf... and gravy..YES GRAVY! YUMMY DELICIOUS BURN YOUR MOUTH ON IT BC IT'S SO GOOD ANDYOU CANT WAIT FOR IT TO COOL GRAVY!!... Dear Big dude up in the sky... Thank you for xantham gum.  That is all! haha   Beef broth.... and xantham gum.. BEST EVER!     *blegh!...side note... when using porkrinds as breadcrumbs.. MAKE SURE it's all ground up.. i just got a chewy bite in my meatloaf.. yummy flavor..Nasty texture.    

           husband and i are already pondering what to make tomorrow...   as for now, i'm gonna grub away.. AND for the record.. my bf is here...and she is not a veggie fan...and found the mashed cauli palatable...and ate all i gave her. yay :D

Induction day 13... HAPPY SUNDAY/Evil Munchies...OH NO!

what a beautiful day!   Brian loved the chinese food i made last night (very easy to make btw)... we all had a late breakfast... brian and i had fried egg on porkroll... the kids had pancakes,eggs and bacon.      then we went for a LOOOOOOOOOOOOONG walk to the park with the kids... (on their bikes)... then spent a lil time outback... Bri's still doing yard work..I'm gonna clean up the kitchen..and get ready to make Thai Lettuce Wraps.  YUMMY!!!!!!!!   My LC Friend Neen is gonna be droppin by with some kale, as her friend told her about Kale chips...    basically... kale, sea salt, and (i'm guessing evoo) in the oven.. til crispy.   mmmmm   Anyway, gonna git jiggy wid~it w some good toosh shakin music, and head to the kitchen :) be back later!

Ok.. So... the day went on with a lot of outdoor enjoyment.... It wasn't until about 5...that i got sucked into a movie marathon on tv.... and of COURSE...every other commercial was for pizza or chinese or snacks... so, needless to say...I FEEL WEAK! BUT I WILL NOT SNEAK JUNKY FOOD!     I learned the hard way in the past...that if i give myself a day where i eat blissful chocolate,and salty crunchy goodness....i wind up feelin worse than after having a bottle of bubblegum vodka to myself!  yeah... don't judge me lol.    Besides, i'm SOOOO close to hitting my 2 week mark!  I CAN DO THIS!     Now... WHAT TO DO WHEN THE BAD MUNCHIES HIT!... First, I grabbed my all time go to... ALMONDSS <3..   if i had a quarter for every time i ran to nuts every time i felt down and out... HAHAHA BAAAAAAAAAD JOKE!    teh salty crunch helped a lot... UNTIL the next movie... then the husb and i started sayin..welll... if we order... we can just peel the cheese and pepperoni off and eat it.... but then i started thinkin..oh... onion rings..mozz sticks.... mac n cheese bites!  (STOP! b4 you think...oh crikee... if i can't eat that.. then forget it!)  well.>WRONG... i CAN have those things.. BUT i have to MAKE them myself.. and after being outside for most of the day...and cooking quite a lot for a few days... by Myself... I didn't have the energy...(now..TOMORROW ON THE OTHER HAND..)  but we're talkng about now.     So... that said, i stepped outside for some erhmmm... ."fresh air"....hoping the next 15 minutes would fly away as quickly as they crashed into my brain.  ****they say cravings generally last 15 minutes... anything after that...ur body is actually craving Something....some key ingredient in what it is you want.     for me.. fries= SALT     double cheeseburger=MEAT!... ps... i like to go to mcdonalds, get a few cheeseburgers...remove the bread and nom away.... also helps you feel less deprived in the dining world.                  
So, those 15 minutes came and went... and we decided we were gonna drag our Too pooped to poop feet into the kitchen at 7:30 at night....and make chicken al fredo w dreamfields lasagna noodles broken up .... Buuuuuuuuuuuuut... i was just tooooo tired... so, Bri had left over general Tso's and i had an atkins shake.   As of now, i'm feeling fine... thirsty to be honest... which brings me to another thing.... YOU MIGHT NOT BE HUNGRY!....   Studies have proven that thirst often comes to us as Hunger......... it is IMPERITIVE that you drink a Lot of fluids... coffee and tea and soda don't count.. bc of sodium and caffeine.    WATER ... WATER WATER WATER... if you need flavor... grab a crystal light packet... BUT! Be CAREFUL! the other day in the store... i found a few flavors that looked fun... and words like "FIBER'...and "Filling"............... i READ the nutritional values...and there were Big time carbs for those teeny lil buggers!...  REMEMBER 0 carbs w Crystal light.    I think i'm going to chugalugga.... finish Happy Gilmore... Google some recipes for Kale, and dream happy dreams of bacon and sausages dancing around in pork roll tuutuus over a hot steamy pan w fried eggs. MmmmHmmm! that's my plan for the night! lol  
As for any of you that might have a mini panic attack when the case of the dorito Creepo's attack... RELAX... it happens to everyone... remember to breathe (lol)  your body is wondering where that toxic junk is that you Used to Poison your body with... *see your right butt cheek if you're in doubt*... Drink a Big glass of water... Chew a piece of gum for at least 15 minutes... or brush ur chompers if you can't chew gum.   ORRRRR grab a celery stick... and dip into something low carb ................  <3       *forks unite*

THE SPIDER STORY!

YAY!... normally, on the days the husband comes home from long trips, we order food... and we either get wings and pizza Or chinese... well, naturally, i was thinking...Mmmm chinese.. AND GUESS WHAT??? I CAN have it!!!! just makin it myself!      i've made the rice before.. and it was really good.     I add chopped water chestnuts to it for alil extra crunch since i'm not eating the peas and carrots in it.. i also sometimes add some sprouts.. but i think i'm gonna leave them out this time.      MMMM can't WAIT to start cooking.. also ... linda's recipes call for xantham gum.. a Lot... so, i'm gonna head out to wegmans to find it.. since they have EVERYTHING there...   YAY!  BBS! <3

soooo... due to an arachnid emergency...*blehblehblehbleGH!* dinner is being postponed until all pots and pans have been run thru the dish washer :( my new emeril.... all into the washer now.. despite MY OWN STRICT HANDWASH THESE THINGS ONLY... guess, i'll have to include some fine print there... In the event that a fat black spider w point fangs and a tear drop marking on it's back decides to taste test left overs.... SPRAY AND WASH!!!!  I MEAN SERIOUSLY?!?!?!  WHO THE HELL THOUGHT IT WAS A GOOD IDEA TO START MATING TERANTULAS WITH THE HOUSE SPIDER????? whomever you are...may you eat mushy cat food for the rest of your life!    UGH!  see..spiders are in my top 5 fears of all time...   normally, my heavly 9 year old aka bug boy will kill'm... play w them..whatever... he knows which are "safe" vs those that can "hurt you"... sh*t... as ar as i'm concerned..they're all evil...and need to BUG*OFF..ha...ha.. o.0    however, my boy is in MD for the day w my parents....  sooooooooo it was up to me... no manly men around here to kill it!!! so, i sprayed it w windex.  What? it was the first thing i had .. OH WAIT! let me tell you how i found this thing!!   i was on the phone w husb he was about to take off from vegas to come home...  and i picked up a green plate out of the sink to put it in the dish washer... my spI~dar immediately locked contact w this critter..and I screamed so loud! i hope i didn't burt his ear drum!!  anyway..i put the plate down.. hung up with him...(he was holding back laughter..NICE..Big Meany)... i then called my neighbor to see if her so was home.. so maybe heeeeee could come gittit.. he was at work... she stayed on the phone with me ... so... i'm heeby jeebying head to toe... sprayed w windex... didn't work..only stunned him..and he was stillhuge and sprawled out... then lysol...didn't work! THAT only pissed him OFF!.... he swam down the disinfected goodness (if only my entire house was as clean as the spider was at that moment..i'd be on the cover of better homes n gardens!!).... Mar and I were trying to figure out a way to get to this thing...well, JUST when i thought he was dead...NOPE! JUUUUST KIDDING! he pops up...and VERY QUICKLY crawls back up to the top of th cutting board... i screamed (sorry mary) ..... sprayed w more windex..since that seemed to be the better of the two.... once he seemed stunned enough..i ran downstairs to get the "nonscented" terminix spray... well... lemme tell you from prior experience... taht ish does NOT kill spiders!!!! LIARS! don't kill spiders..and sure as Heck isn't Nonscented!...  so.. i sprayed on and off playin cat and mouse with this thing..at one point...i almost grabbed the cutting board and tossed it...BUT he FLIPPED BACK OVER!!!!!!FROM HIS BACK TO HIS...legs...*shudders*   then i sprayed again... then back to his back he lay... i waited for a few minutes... honeslty.. you'd think...that after all this spraying..he'd be dead... well.. no.. he kept twitching his damn legs... finally...i sprayed him down far enoug (THANK GOD FOR THE SPRAU OPTION on the Nozzle!)... when he was balled up enough... i gloved up w an oven mit... hebby jeebily grabbed teh cutting board..and tossed the board and sir twitchy~aint gonna kill me~Spider into the trash can.    Fortunately, Mary had a spare cutting board... sooo..there's a happy ending to this.   i think i need therapy... this fear of spiders is ridiculous!!!!!
  BACK TO DINNER~~~>
  so, if you click on her link for the generals sauce, she'll state that w the recipe..there' not enough for extra suce.. ummm.. there wasn't enough for all my chicken... like wearin a B cup when you're a D.. yeah.. SO, i doubled the recipe.  I do NOT have a zester :(... But, what i did was take orange skin and fresh ginger chunked...and put it in the food processor..OH and i doubled the recipe. :D
   so, the chicken is  in a big Spider free bowl, resting in the marinade, covered w foil..because i'm out of Ziplocks ....  it has to stay there for an hr.   then i'll chop up some peppers and onion... and finish what the recipe says to do.
        In the Meantime... i'm gonna get started on the shrimp fried rice.  YUMMY!  bbs!
  HOLYFRIGGENDELICIOUSNESS!  this shrimp fried rice is aaaaaaaaaamazing!!  the chicken is finishing up now... I made the kids nuggets.. but, tyler wants what i made lol.  Seriously.. the shrimp???? *drools*
 as for the chicken?  Pretty Damn Good! tastes like a lighter version.. (well.. it is!)  very clean.. and general tso~eeeee    *forks unite*

Induction day 12 :D

hiiiiiiiiiiiiideeee hooooooooooo friends :)
   I hope your weekend has started off with energy, smiles, and looser clothes!  I wanted to show you guys the grub i made yesterday... but, i was soooooooooooo tired, i never took pictures. EEK!   So... I'll post Now... Stevie and I are currently eating the hamn cheese quiche.. I got a lil experimental with the "crust".  Normally, i don't do the crust bc of the ingredients.. But, this time, i thought i'd try something new.  It's.... Different.. but, really helped with the texture (not so... wet)   Crust= almonds crushed up the nest i could w the food processor... melted butter, baking soda, and a lil onion powder for flavor... It's not that bad... just a lil.. crunchy.. but.. a soft crunch.. which means, i'ma have to dig down and pull out the Alton Brown in me... and continue to experiment.  The filling was 6 eggs, some heavy cream, chives,diced ham, and cheddar cheese :D<--- Cheesy smile :-p   Both stevie and i are enjoying it at the moment... i'll def make it again, but work a lil harder at REALLY mushing up the almonds.. OR.. i'll just fork out the extra money, and buy the almond "flour".  
          The cabbage soup was nothing but satisfying,delicious, and full of fiber.. do NOT GO OVERBOARD when eating that soup! lol
          The taco dip was pretty tasty too .. i had a few scoops on some pork rinds... I def, missed the shredded lettuce, but.. i ran out of it.. however.. i did find some green olives and jalapenos. YUMMY!
        
Later today, i plan on taking some ground meat out of the freezer... and beings the taco burgers were SUCH a HUGE hit with the boys, and the hubby is coming home.... *MUST HIDE MIXED FOLDED SOCKS FROM HIM!* haha... i think he'll enjoy as well.       :( he bumped into a fellow co worker he hasn't seen in 5 years... and this dude didn't even recognize my husband.. once he realised who hubby was he said "DUDE! YOU GOT FAT!".. which was a wake up call for him... he travels aaaaaaaaaaaall over the country putting all the sports and other things on YOUR TV ... he blames eating on the road for his downfall... But..almost EVERY place you go to eat, has veggies,fruits, salads etc.. soooo maybe NOW, he'll go for sashimi vs sushi etc.     If i could get him home for just ONE MONTH i guarantee he'd be leaner,healthier,happier and more confident with himself.   :/  Maybe i can get a petittion out there to everyone and ya'll can boycott sports for just one month..HAHAHAHA YEAH RIGHT!   Anyway... i'll be updating later.... might need to post a new blog tho.. i've had issues posting pix, then continuing to blog under the pix...   anyway...here's the food... ONCE i find my Nikon cam charger, better pictures will be posted...giving true color and detail to the yummies.

Induction day 11....

Tut Tut.. it feels like rain.... Aaaaaaaand man is it a windy rainy day!!! These are the kind of days i like to just "veg" out .    I'm GONNA make that darn taco dip! ...and enjoy it w some pork rinds and celery... all the while, enjoying the yummy delicious smell of soup... I'm thinking, before we have another veggie catastrophe, it's time to cook the cabbage!  Soooo... i'm gonna put some beef stock in the soup pot, chop up the cabbage into bit size pieces, layer some onion... LOTS of garlic (Nature's cure all ) and some smoked pork chops, and lots of fresh ground black pepper... mmmmm it's gonna smell good up in he~awh!  
         I was so excited yesterday, bc instead of the normal baggy hoodies, and sweats...to hide in, i tried on an old pair of jeans, and tee... and THEY FIT!   what a WONDERFUL feeling that was!
      *taps on tummy* knock knock! hello mcFly... anyone home?.... i've lost my appetite... no idea why.. I think possibly... that my body has effectivly learned to not only switch over from bordem/emotional eating (aka,...24-7 munchies)... As well as to only want food when i'm hungry.   My doc had recently told me that i might be one of those odd balls out there that doesn't need a lot of calories to function... I DISAGREE with that... bc anything less than like... 1000 calories in my opinion is deprivation... BUT, like i said, ... even w 2 shake, a piece of mozz string cheese and a few handfuls of nuts (wasn't paying attention to portions last night while watching a movie..OOPS)... i still manage ok.  So, we'll see.   I would like to think that... maybe i'm giving my body (not w yesterdays ingestions of course) but.. in general.. i'm giving my body just what it Needs... and the rest of the flubber lingering on like a fat kid in a candy store has no other choice but to just melt away and feul my body w energy.  Still, I AM aware I need to be eating REAL meals...   Just not sure why my appetite is Non existent... esp coming from a food lover.   Me+ loosing appetite= Rose, holding her hands out to jack as he sinks to the bottom of the ocean.."come back! come back!!!!".. HA!    well, in hopes that my favorite foods being prepared and easily accessible to me today, will help.   BUT, let's not forget the words of our parents and drs... ONLY EAT when you're Hungry, and only til you're satisfied.. some say til full... but, i HAte that bloating... DON'T STAND BEHIND ME I JUST ATE YOU HAVE BEEN WAAAAAAAARNED feeling...  esp w out a galbladder? haha WATCH OUT NOW!! blegh!  anyway, i'm gonna venture into the kitchen and start conjuring up grub.  the pix i add might not be as great... bc they'll probably be taken via cell phone... bc my lap top is on her time of the month apparently, and is refusing to connect to the wireless today...I have been taking pix with the Photo booth... *sigh*  it's just not the same w/out her .   lol   Anyway, i'll be back!

LAPTOP'S UP!   starting out w three cans of beef stock...PS... whenever Shoprite has their CAN CAN sale.. That's the BEST TIME to "stock" bwahaha o.0 up on your stocks/broths etc.... Anyway... Gonna add 3 cups of water now...    turned on the burner... med heat i guess... Gonna add the pork chops now.... Whole, Frozen..and letm cook..I like putting them on the bottom of everything.. just my preference... plus.. they cook nicer.. AND FYI..the LONGER you cook this stuff, the more tender the meat n cabbage get... melts in yo mouth! mmm
    next... gonna thick slice the onions.. you can dice'm if ya want.. but i like the long "noodle"shaped slices of onion. mm mm mmm...    
        Then... add as Much garlic as you like :D...then the black pepper... *NOTE* i don't add salt til it's all dished up... bc the smoked pork chops have enough salt in them...as does the beef stock/broth...whichever ur using.
        Noooooooooooow... i'm gonna whip out my mr miagi skills and choppa choppa!   CAREFULLY place all the chopped cabbage into the pot... EXPECT overflowage.. SEEE? this is why i find it easier to add the other stuff first, and top w cabbage... the cabbage will cook down... make sure you keep checking on it tho.... and occasionally stir.
      Do you have left over cabbage striking the pot?? "HELL NO WE WONT GO!"? well... grab some butter.. YES butter... get a large frying pan, get that garlic  back out... and fry away!  Yummy crunchy comfort food.. VERY high in goodness for you! :D

I AM TIRED! ... soup was GREAT!... made the taco dip.. soprry...pix next time...and i'm making a quiche w an almond crust. should be interesting.    forks unite! i'm hit the hay as Soon as the quiche comes out xoxoxoxoxo

I'm Meeeelting~! meeeeelting! goodbye cruel fat!

Ok..sooo... i only have 3 pix...BUT..i will continue to add pictures either triweekly or monthly ... I can't believe what a difference already since December!>.. although... January... i was on and off low carb.. lack of encouragement..and too much left over holiday crap.    so.. alas... started near 200 ...and now i'm almost down to 180!!! WOOT!  here we go

Good Moro ol chap!  Last night's dinner was Bib worthy!!!!  I'm not sure what i'm making tonight... I have to check and see if i have any cab'auj ghaga (cabbage)... If i do.. then I'm TOTALLY making ham and cabbage soup!   I think it's a great day for that... Still cold out.. Brrr  Looking forward to tomorrow..w a hight of 57...I'll take the thunderstorms!!!! ANY DAY!.. as long as it's above 32* .... BUT I WILL say, thundersnow is an AMAZING phenominon that i've been lucky enough to witness twice!.. still, i prefer a warmer temp .  
       OH!  HAPPY THURSDAY!.. Today Begins THE FINAL WEEK OF MY TWENTIES!!!!!   3/3= 30!   I'm trying to figure out what to serve for the party... we have The Famous and lc friendly picalilli tails... along with a few 2 foot hoagies for the others from wawa... i think i might make some LC taco dip, serve a veggie tray, and celery dippers...   Maybe even a modified version of my broccoli salad.. BUT i'll have to label "splenda" on my modified version.. bc there are a few sensitive to splenda.. and i'll make the other w sugar.............   Also cursious to see if i can find a LC raisin substitue... hmmmmm......might do some dehydrated red peppers OR dun dried tomatoes... hmmm... decisions decisions..REGARDLESS...BACON!! is a staple.. so i'm sure i'll be licking the bowl giving myself a Santa make over when finished!! hahaahha   mmmmm.. It IS my 30th..Might go ALL out, and splurge a lil and make some Dreamfields pasta salad... w pepperoni...And olives of all shapes sizes and color!!!! (minus pits)      I've been SO good this time around w NO BREAD OR PASTA!!!!  i DO have low in carbs tortillas... green onion flavored.. mm... But that's a *break the glass in case of emergnecy* thing... and haven't touched my boxes of dreamfields..which ALSO makes me think..perhapps i'll make a lasagna too! Ahhhh and.. my sister in law's mother in law makes this AMAZING MESS UR DRAWS SO DANG GOOD buffalo chicken dip... might need to make that too!  won't be nearly as good as hers...   AH! And my hot crab dip.. YEP!   *George Lopez Voice* ~I got Dis!!~  haha   gonna have a cup of coffee, take my morning pills ... and ponder while i clean out the fridge... been a while... puddings are mixed w atkins shakes..mixed w lettuce... and yogurt.. NO organization  haha thaaaaaaaat's what happens when i allow my youngins to get a "fridge snack" on their own.   I MIGHT vent per weakness as i take out some goodness... I just need to remember as i Move those things FAR FAR away from the HEALTHY stuff... that 1. kids can have it..., they can use the calories,etc.  2.   MOST of the crap in there has contributed to my prediabetes... Remember... I'm a boredom eater and binger!....    THANK YOU BTW, for reading my blogs.. knowing i'm impacting someone somehow.. be it a giggle, a thought, or inspiration.... HELPS me and inspires me to continue to write.. which helps me emotionally, keeps me out of the kitchen... and gives me something possitive and recreational to do!! :D  *much loves* ((hands you all SF homemade cheesecake mousse)) OMG! I forgot About those!!! My fave homemade recipe is my reeses wanna be... amazing.. fluffy... oooooh soooooooo gooooooooood!  i'll try to make that soon.. and post!    OH!  I NEVER MADE THOSE DARN ONION RIGNS! but i plan on it.. promise! just dunno when...      i think i'm procrastinating w the kitchen...o.0 hahahaha  ok ok ok... gonna get some chores done.. plus the dang fridge.    YES! I! CAN!!!! LOL ;)  be back later

200 calories.... 15 from fat. cholesterol less than 300mg...but, still in there.... *not a significant source of vit a,vit c and calcium,,,Now, i'm not knockin whole grain pasta at ALL!... just sayin in comparison, the texture of the shirataki is like regular pasta and not gritty... flavor tastes like the white pasta.. and it's lower in calories.

I'm NOT tryin to sell anyone on any kindsa food, or tell you how to eat. I just did a lil comparison is all, and thought i'd share :)

Good Morning! Induction day 9

Well, last night i dance my butt off!... and for haha sake.. I showed my friend the Chris Cross song... got One of the moves down..yeah, ONE! lol... maybe, after i melt some of my blub away, it'll be easier to groove.    Have you ever seen Flubber?  the Epic Robin Williams Movie?Flubber <3ok well... there's a scene in there where a chick is walking..and Flubber starts misbehaving.. and mimics her caboos.  Well,... I a mother have 3 had.. 3 c sections, first child being 12 pounds! (gestational diabetes)... stretched my tiny 120 pound body to 220!!!... so, the kiddos plus other surgeries.. brings my abdominal surgeries to a whopping 7!!!!!!!!!  causing some serious abdominal muscle atrophe..and now, if and when i try to sit ups, my guts/lack o muscles pop up here and there everywhere like a mean game of whack o mole! and it's SO uncomfortable.. sometimes painful... POINT IS... w Chris Cross.. my tummy looks like Flubber flappin around .... it's like wearing a weight suite! lol     at least, w low carb, the flubby flat will melt away.

I'm not very hungry this morning... So i think, i'll just have an Atkins shake.   Not sure what i'm going to make for lunch yet either.   I DO KNOW later on... I WILL be making onion rings using the pork rind parm recipe ingredients are at the end~ish of the page.           What are you making today?... Later?     I'll be posting later <3

I've decided what i'm doin for dinner! gonna make all natural "al Fresco "brand Spinach and feta Chicken sausage... cut into bite size slices, simmered in chicken broth ... with that heavenly sauce i made last night.   *drools*  will be frequently updating the dinner blog.. stay tuned!
  I just noticed these snausages are fully cooked! this is a good thing bc it will speed up the cooking process.   As i said, the sausage has feta.. so, that yummy cheese will seep into the chicken broth...... Once the sausage is soft, that will be perfectly done for me.. in which Then, i will drain the chicken broth and yummy drippings into the sauce pan, and whisk up the white sauce... I'll probably have a side of French Style Green beans with it.   YUM! i can't wait to eat!  ....... i gotta say..
           all i had today was, some nuts w a little mozzerella... and an atkins shake and lots of water.. I just wasn't very hungry.   OH!!!! HURRAAAAY! btw.. a friend of mine sent me a txt saying "do low carb with me pleeeeeeeeeeeeeeease" well shoot! don't have to ask me twice!    She came over, i showed her a few great links.. and we talked yummies while our little guys played leggos and "buddies".    It really DOES help to have a partner when ya do this stuff.  Today is her first day, and she's tryin out the pork chops    lol she's not a fan of the smell of porkrinds.. but then again, who is!!  ........... i also gave her last nights sauce leftovers.. good amount there.   So, for tonight, i'm just making it fresh.    It was SOOOOOOOOOOO good!!  The mozzerella gave it just the right touch.

  OH*!*!**! almost forgot.. I'm gonna try the tofu noodles!    HAHAHAHA ew... drain and rinse.. parboil for 2-3 minures to reduce THE AUTHENTIC AROMA..then dry very well.  mmkay.  here goes.  *HORRIFIC SMELL!*  HOLD UR NOSES! smells like fish mart in philly!
             WOW!!!! DELISH!!! i will say i probably wont eat the tofu "noodles" plain... def needs to be in something.. but this is AMAZING!!!!!!!!!!!!!!!!!     4 out of 5!  pix of how it's made...

Tuesday Day 8 of induction

chelloooo.   pretty busy today... But.. today's adventures thus far have been...SHOVELING! *GAAAAH* stupid snow!  aaaaaaaaaand i've been up and down my basement steps Lord knows how many times!!!   Got a TON of laundry done!   I just might have defeated the Sock monster! *sinister voice* muahahahaha

... had 2 cups of coffee, and a lil bit of a breadless cheesesteak.

  Later on, i plan on dancin to just dance 2 with a few friends... and having a great time!!!   I have chicken thawing out... later, i plan on making seared chicken, with buffalo sauce. Yummy!  might make some Zucchini fries too! whatever i make i'll be posting pics!

Change o plans!   bc the chicken packet i took out of the freezer only had two large boobs... i decided to maaaaaake... well. chicken!  but not buffalo...

i thick sliced 2 zucchini...    put a quarter can of chicken stock in a pyrex.... tossed the tatas into the middle... seasoned w onion powder and Mrs.Dash original... then took the zucchini "coins" and placed them all around the chicken... sprinkled everything w parm...and drizzled EVOO all over... it's baking in the oven at 350,... i'll take it out in 30 mins... flip the birdies over, bake another.. mmm..15 mins or so..  then take it out...THEN... take it out.... SMELL THE GODDLYNESS! mmmmmmmmmm... wipe your mouth.. wash your hands.. OK!... Now.. grab some oven mitts ... sport that hottness like a fashonista on the red carpet..tadaaaaaa *strike a Pose!* and VOGUE!... CAREFULLY!... Drain the liquid out of the pyrex... OH NOOOOOOOOOO!  Watch out for suicide jumpers....   (the zucchini coins)...  top chicken w a lil pepper jack... But WAIT! That's Not All!   Tell us, Bob...what else comes with!... ok..     i'm also making a garlic parm cream sauce... takes like.. 5 minutes to make, so i'll do that at the very end.  mmmm... in the mean time.. i'm gonna head back to that retchid pile o socks... and match ... think hubby would notice an ankle w a cruecut?  i mean.. if i just ball them all up... and tossm in his luggage just b4 his next travel.... it's winter time!.. no one will notice... haha!

Sauce time!!!!!!!!!!

half a stick of butter
~1TBS minced garlic
1/2 Cup Parmesan Cheese
1/4-1/2 Heavy cream
lil chicken stock for extra flavor
after MAJOR bubblage... add a handful of shredded mozzerella... and stir semi~frequently... Don't scratch ur pretty pot! use heat proof rubber spatulas :)...You're welcome :-p

when all is done... feel free (as i did) to sprinkle just a weeeeeeeeeeeeeeeee bit of smoked paprika for perdiness and that extra zing ;)

Simmer... and serve<3

helloooooooo induction is easy peasy.. mm peas *bad jenni* lol


so, after getting the news, as said before... i am borderline..like... one step over that line *poof* diabetic. EEEEEEEEEK  so, I started Atkins (which WILL be a life long thing for me now)     i don't remember the past few times it being this easy.. but maybe that's also partially due to HEY JACK ASS! YOU GONNA DIIIE haha,,, (not from diabetes.. but other crap... so.. tadaaaaaaa gettin healthy.   I've lost 10 pounds give or take w random water retentions (chuggalugga my fellow scale watching atkinites! or that evil scale won't hesitate to say in the words of sir Iglasias " with an I" haha.... DAYUUUM!   Let us also not forget the satan posessed Wii balance board scale.. BOOOO!  "oh!"  Oh THIS HEFFER! ahaha   Soooo let me share with you my lovely journey as I coast along in cheesy bacon wrapped goodness with all i've done so far!

cooked and SERIOUSLY DRAINED/ Smooshed in paper towels cauliflower
 then... KILL IT!!!!!!!!!! in the food processor.. I added some chives and a lil cream bc i done did good paw!..w dryin those buggers out!!! :D thank you thank you haha ok ok ok..
Mean while.. I took 3 pieces of bacon..chopped it up..and fried it.. MMMMMMMM
Then... in a sauce pan.. melted 3TBS butter... 1/4 block cream cheese... handful mozzerella,handfull cheddar cheese ((if you are a dwarf... make it 3 handfuls <3)) *i love dwarfs btw.. showin the love!
.... and cream.. NO i do NOT know how much.. as i kinda just went along. *GASPS!* I forgot.. towrads the end of processing your cauliflower ... add an egg... it helps with the texture in my opinion.

THEEEEEEEEEEEEEN.. I poured this heavenly concoction into a lil foil baking dish (easy clean up.. )... topped w the TINY amount of bacon grease... and then sprinkled my masterpiece w the cooked bacon. <3      should be done soon........ my 4 yr old keeps asking if it's ready yet. lol        

we will enduldge a lil... BUT alas, this beaut must wait to be served w dinner... which.. i plan on making Parm "breaded" aka...COATED Pork chops. w a side of green beans and the heaven stated above.   mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm

why did i make it now you ask?... well.. who doesn't love the smell of bacon in the AM... and honestly, i'm not hungry.
THAT'S ANOTHER THING!!!! I'M LIKE... RARELY STARVING/HUNGRY ANYMORE!!!!!!!!! this "way of living" is even helping tame the bordom purging demon inside of me!!! i love it!   I have tons of energy.. my moods are a lil easier... haven't been having night sweats... THIRSTY a lot still... but.. i also have other health issues... ANYWHO!  HELLO BEACH SEASON! This Mommy of 3 is gonna be lookin pretty fly!!!    will be posting pix ...OF THE FOOD haha




            LATE LUNCH WILL BEEEEEEEEEE..... yep... Eggplant.   I'm gonna lightly bread it in ... pppppppppPaaaaaaaaaarmesan after letting it swim around in some eggs... seasoned w minced garlic,salt,pepper,and lil onion powder and oregano. mmmm then ... i'll pan sear it w some cooking spray.... top w Mozzerella and a lil tomato sauce.. Hunts seems to be the best for staying in ketosis...     My Fellow Atkinities..... what red sauces do you use??

This just in......... eggplant THIS JUST IN! EGGPLANT CATASROPHE!!!! waited a lil too long to cook that big boy up... RIP old lad. ... STULL have a craving for something crunchy...SO.. gonna do the pork chops now.  Just crunched up some porkrinds. got a good amount of aggression out w the hammer... hehehehe sounded like world warwas happening up in he~awh! lol anyway, gonna add some parm, and spices, dip the pigglets into some egg wash, then the parm stuff, and fry'm up.  I think... they're gonna look like they are breaded w Panko... mmmm.    Also, thanks to a LC friend Tim, he told me how to use Shirataki tofu noodles.  *gasps!* tofu ??? Ahhh.. no no no.. don't be silly... tofu is well known for many good health things.. GOOGLE THAT!..lol AND it takes on the flavors of whatever you're cooking it in.  Will upload pix when finished :)  *forkes unite*

wow

hi... ok.. so.. i've been really sick a lot lately... first, fixed an ear issue w a root canal (ouch! 3 hrs long on new years eve morning... felt all three hours of it too... novacaine did Nothing)... found a great dentist... getting 2 teeth fixed this fri...and had another fixed 2 weeks ago yay... i'll be nommin in no time.. as for the sick... finally got blood work done...diagnosis... NOT GOOD.... seeing a cardiolosgist soon w Penn group... having more blood work drawn soon, more tests are being run now.. but long story short... ANA possitive,High phosphorus, High wbc (75,000)....dr says it's not good :/   in the meantime.. i'm going to resort to what i always run to when i'm down and out... to keep my mind off things... you guessed it..FOOD!!!!!    i just made taco dip...

1 pckg cream cheese softened, 8 oz sour cream, bag of taco blend shredded cheese (all shoprite shredded cheese is on sale right now... 3/4 bucks yay)...   in meantime... to dip it... i'm making crackers...

1 stick softened butter
1C flax seed meal
1 bag shredded mozz...

mix into a ball,refridgerate for 30 mins... I took the ball though.. and seperated into 4 rounded logs.. so it's easier to sclice.

preheat ven to 400... has it been 30 mins> yay.. ok.. take out logs... slice w very sharp knife...watch ur fingers!! !ouch! ... slice into 1/8-1/4' slices.. place on UNGREASED (trust me) cookie sheet... and bake for 6-10 minutes.. WATCH them.. bc they can burn easily depending on thicknedd.       aaaaaaaaaaand once these bad boys are done.. i'm SOOO endulging!!  later... i'm gonna make smothered sausages... found on another site... low carb..   mmmm sour crout... ground beef... Prolly more of this fantabulous taco dip... shredded lettuce... no sugar added relish no suagr added ketcup and spicey mustard!!!!!!!!!!!!   you'd think i'm preggers w all the toppings, rightz// hahaha yeah.. NO WAY on that one... i just want comfort food... and i'ma get it!!!
