I have been so busy this week making appointments, dealing with youngin issues, and the dentist!!! YIKES~!
Lemme tell ya a lil bout THAT! So, i have this huge elaborate dental plan worked out right... ending with a grand finaly of (after inusrance for THIS year) 23,381 dollars,. YEAH I KNOW! So, i was gonna have my far left bottom molar done last... buuuuuuuuuuuuuut... i kinda sorta broke a corner off eating pickle popcorn w the kids back in Feb. SO... Feb 2, i had it "fixed". Dr said, it's a deep one... but i can take care of it.. no root canal needed.. Hurraaaaay ok. So, he does his thang... and says, ok..done. BUT, it might be sensitive to cold/sweets. O.0 i'm sorry...what? This tooth didn't hurt./wasn't sensitive to anythig b4 this, it just didn't like popcorn haha..
So, a few weeks come and go, and i notice the Ow... was turning into a more frequent..WTH!? then... as of Monday...a W*T*F! (stars included!) I knew this was more than a "might be sensitive" issue... so, I called the dentist teary eyed ( Mind you.. i've been seen since then for other work... and No issues) they tell me the filling might need to be adjusted this that whatever..and get me in immediately that evening. So, i get in there, and the dentist says, oooooooooh... so, it Is that bottom tooth... aaaand you need a root canal, ... it's down to the bone.... I';m sorry.. what??? So, after i set up my appt,... the front desk people say, how'd it go? i said ... "I'ma gitter doooone" they laughed.. I LOVE EVERYONE AT THAT PLACE!!!!! These are words i nEVER EVER thought i wouild say reguarding a dental firm!!! Anyway....
yeah.. so, i went in on 2/3 had a filling done.. apparently, something didn't show on the xray... it was sealed in to the tooth... turned all kindsa funky....worked it's way to the root..and bone.. SO.. she gave me some "happy pills" to get me thru... they moved their schedule around...and got me in for my procedure on wed. 3.23
I was given scripts for my sedation.... diazolam and triazolam (valium..and some other jauny jaun...that ROCKS!) So, i take the valium tues night.. invent a few new words..my favorite being percuptulum (purple Cup Pendulum) <had to be there> fell asleep....... woke up, took the other valium..took a nap... woke up at 12..showered, took the first trialzolam at 1. got to the dentist.. dr K crushed the rest up giving me one every 20 minutes under my tongue. the first time, didn't do much... he asked on a scale from 1-10 10 being..you wanna run laps, 1 being ur reeady for a nap.. i said...8. we talked about dental stuff... 20 mins later..repeat.,.. i said 6,..he said hmm ur still to alert.. repeated... then i forgot his name.. lol..kept callin him doc..THEN we talk about my implant i might get... and he says, i'll need a bone graph.. i said.. mmmmmmy boooone? he looked and smiled..and said, yes or... sometimes, we use bovine. I stared blankly then confused... he says, "it's organic don't worry" HAHA.. THEN I SAID... will.... i .. moo? LMAO! He says,, "NO JEN, YOU WILL NOT MOO" at that point, i was pretty sure i was feelin the meds and loooooooooong gone... . i started talkin about how i wanna go back to school and be a music teacher... he says YEP! Hitterup.. turn on the nitris! LMAO!
Soooooooooooo a few mins go by...the three of us are arguing over what scent my mask is.. either pineapple or strawberry bubblegum. LOL.. then, i get the needles.. didn't even flinch! i mean, he's awesome to begin with but with this stuff... WOW! OH..and i had ZERO anxiety!!!!!!! lets not forget the root canal i had on new years eve day was a nightmare (from a diff dentistry on rt 130 in cinnaminson) felt EVERY minute of the 3 hr procedure!!!!!!!!!!!!!
ANYWAY... he's in there doin his thang... and the next thing i know... he's done with the root canal...and proceeds to fill 5 out of 6cavities on that side! HE IS AMAZING! be back soon.. gotta get ry ready for the bus...

monday,,, eh
it's a rainy monday... and what better way to wait the rain away then play with food! i had an atkins shake.......... brought the kids to the bus .... came home... took out the sewing machine (finally!) ... then thought.. hmmm... i want a salty snack.. and decided to make Mozzerella Sticks!!!!!!!!!!!! mmmmmmmmmmmmm I can def taste the pork rinds.... subtle.. but it's there, so i recommend adding spices... BUT DO NOT add salt, or you will wither up into a raisin with a stank face.

saturdaaaaay in the paaaaaaaaaark
Well, Ty had a sleep over last night..... and we did very well!!! the kids pigged out, and we didn't o near ANY of it! lol!!!! hurraaaaaaaaaaaaay! I never did get around to attempting Mozz cheese stix........ but that's quite alright with me......as i was pretty full, and Brian was content w left over chicken and soup from the other day. :)
Despite the handwashing...... my hand STILL smells like yummy buttery syrup....... so, i'm thinking i might have to make Brian and I oopsie pancakes or something..... I'm TELLING YA! if you're craving crunch, and miss breakfasty "sugary" french toastish foods......... MAKE THE PORKRINDS! **drools**
(i want more of a pancake thing today tho... since that's what i'll prob be making the kids for breakfast...and pancakes are a HUGE WEAKNESS to me... so, i'll make my own ;)
Anyway.. I'm Sure i've mentioned b4..But, if not........
FRENCH TOAST PORK RINDS
Grab a microwave safe bowl fill it most of the way with PLAIN pork rinds
Spray with cooking spray
Sprinkle cinnamon and splenda...toss to coat...Repeat if necessary...
MICROWAVE for 30 seconds (not necessary but it's yummy warm!)
Drizzle your favorite SUGAR FREE breakfast syrup over it..and eat up!! (fyi... if you allow to sit for a few minutes, the syrup WILL soften up/possibly sogg~ify ur grub) if you're into that kinda thing... the have at it.. other wise... enjoy immediately :D
So, after all the grub is taken care of......... we are gonna get the kids ready, and i'm going to bring them to the field for baseball practice. Then, Tyler is going w his bestie to a sports party down the street. After that, ty will head home to play with my hubs and i's son Dyl.
In the meantime.. Hubby will be building Tylers room with his pop... so, it's gonna be a busy day for us :) AT SOME POINT I'M GONNA SEW DARNIT! I wanna make AG clothes SOOOOO bad.. but i always find myself caught up in something else! haha
Well, i guess i should start cooking, so Bri can eat b4 he has to leabe to meet his pop.

friday friday fridaaaaaaaaaaaaay
ello Loves ;) Yesterday was such a nice day! we went grocery shopping to 3 different stores.. spent the later part of the afternoon watching tyler practice baseball w his team... then came home and had some irish food.
::sigh:: I finally picked up the phone and made the appointment w the specialist to go over my blood work. The date is set for Monday April 11th... i'm pretty nervous. My body has been so out of wack lately... i don't even want to Think about what it could be.
Smoking! MAN! i do NOT miss it... HOWEVER... I am having a difficult time with the hamd/mouth thing, as well as the "turn to smokes to avoid my emotional pain/struggles" like.. today.. i was so ticked off that my jeans wouldn't stay up... and i started crying.. not bc of the obvious.. Eh.. i'm loosing weight........ but bc my body is far from normal......... my torso is so hacked up and lumpy from all the scars from the 9 abdominal surgeries i've had :( I wanted to badly to brush off the feelings, and go out for a smoke... but i couldn't/didnt... HOWEVER i also did NOT run to the cabinet for a salty snack.. *pats on the back* So.......... instead, i cried for a few minutes... "brushed it off"..... and went about my morning doing laundry and such. i can Honestly say i hate my body... But, i'm doing what i humanly can to better it! WHICH brings me to my next thing...........
HOW TO STOP EMOTIONAL EATING!!!............ this is probably where i'm supposed to fill in the blank.. or post a good dr's name w a life time supply of Scripts for Zoloft/Paxil/Prozac etc. Well.. guess what..... I got nothin. All i can say is if at first you don't succeed ...try try again.......don't give up, and have faith in yourself.
I was def. loosing will power to get healthy and all that.. then i took a few pix today..and compared..and despite the numbers on the scale.... My pants don't lie... neither do the pics.. i def lost.. which has inspired me to continue to GET HEALTHY~er! I'm proud of myself.. I've accomplished quite a lot in the past few months.
I've learned to Confidently say NO
I QUIT SMOKING
I SERIOUSLY cut back on drinks
I started excersising
I RAN for the first time in forever
I FINALLY went to dentist, and got/still getting Major work done!
I've lost some inches
I've inspired others to get healthy...and have helped them on their journeys as well..
I've grabbed my life by the horns, and chose a direction,steared, and hit the gas pedal...
I'm getting somewhere! and the only other direction MY option is ... is UP! :)
Now, back to the fun stuff........ FOOD!.... i had a mocha Atkins shake... then i drank sugar free strawberry banana jello on ice to fill me up so i don't nibble on nuts... I'm not sure what to do for dinner. I'm not a hard core religious chick.. but the husb wants to have fish to be "traditional"....... i DO have tilapia fillets...and asparagus.. soooooooooooo beings it's gonna be in the 70s today.. i might just have to turn the grill on, and bbq some fish! Other wise, we will have bbq chicken and cauli~something. oh! the Pics!!!! check this out! With quitting smokeing.. plus my bday and all............ i def had a good amount of food i should NOT have had............ HOWEVER..I STILL MANAGED TO LOOSE! so... here is 3.5week difference

Happy St Pattys Day Everyone!!!!!!!!!!
Hope everyone is happy healthy and well this morning. :) I woke up to a matted messy probably shoulda called ripleys believe it or not Knot on the back of my head.. YIKES! dinner............ corned beef n cabbage... was good. kids liked the meat... the spices in the cabbage were too large... next time, i'll cook the spices in there... but find a way to bag'm n cook'm.

bitter sweet
so... while i was waiting for dinner time to come.. i had a few drinks, and some tostitoooos... salsa.. pretzle sticks..and ranch :*( then i had whipped creme vodka.. yeah.. kinda had my ow n party by myself on the couch. he ended up making dinner (that i didn't eat.. tooooo full) but hey.. i did marinate the steak.. proud of him. he didn't eat the snack food. anyway... *throws streamers and confetti* yeaaaahaaa... what a celebration........... needless to say <sigh> my naked fingers seemed lonely, so we (my finegrs and i) endulged. I felt SOOOOOOOOOOOOOO guilty afterwards... like... felt like i had just eaten a death by Fudgy chocolate aCAKE! AAAAAAAAAAAH! so.. i laid in bed, took a short nap.. realized how pathetic this ENTIRE situation was/ why i was eating sh*t... and decided to do something about it! SO!............. i made myself get up off the bed.......the 9 yr old followed me..............and we ran!!!!!!!!!!!!! YES! I RAN! and damnit it felt wonderful!!!!!!!!!!!!!!!!!!!!!!!!!!!! like Forrest Gump... here comes jenni... just runn~in.. because i can... and i just raaaaan and raaaaaaaaaan.. ok ok ok ..well... i Jogged.. but it still felt WONDERFUL! i jogged 1148 in about ten minutes. WOOHOO! i plan on bringin that up to 1500 in under ten within the next two weeks :D OH YEAH! did i mention... once we turned down our street (all UP HILL!) every front light/ diveway was a milestone for me.... and before i knew it.............. i was super close to my house!!!!!! i sprinted to my hosue once i was 5 houses away........... rant o the steps.. and plopped down. tyler was congratulating me on a job well done as i didn't stop running Once!!!!!!!!!!! and kept going at a steady pace the entire time! (i love my support system!) then...it hit me like a Ton of bricks!!!!!!!!!!!!!!!!!!!!! ever see the show I USED TO BE FAT??? like..9 out of 10 of the kids hurl after their first real cardio?? well..yeah.. that was Me!!!!!!!!!!!!! and as gross as it was... it also felt great! I SAW IT AS.. i FINALLY pushed myself... i didn't puss out..and stop bc it was too hard.. or bc "i couldn't do it"............. i pushed myself!! I DID IT! i can't wait to go again tomorrow!!!!!!!!!!! as for the chips.. (i truely went overboard...) i have no doubt in my mind that.. *TMI WARNING!* i ralphed all the chips up and out!........... so .. i don't need to feel TOOOOO bad about "cheating" today... it wasn't worth it.. esp after running and workin my butt off! and yackin and stuff!!!! i def had regrets. ANYWAY!!!............ here's to a new me.. YET again!!!! what new accomplishments have you done/have set in mind? dn't underestimate yourself. YOU YOURSELF are your ONLY Barrier to anything and everything. YOU CAN DO IT!

Down another 2!!!! just wanted to share the grub i've made...and whats been goin on :)

| black soy bean based chilil... rotel,chili powder,cumin,franks red hot,ground turkey,1 small yellow onion............ served it over cauli rice! AMAZING! *~*~*~*~**~ WARNING.. TMI alert...as absolutely Fabulous as this chili was...and it truely cured our chili craving.... IF you make chili...as you know.. on LC... u have to do soy beans... DO NOT!!! I REPEAT! DO NOOOOOOOOOOOOOOOT eat this ... then take a hot shower a few hours later.... x.x Good GOD MAN! ok... seriously though?.. we have been doing great!!! I made him my cinnamon toast crunch snack... Pork rinds, lightly sprayed w 0 fat cooking spray, sprinkled w cinnamon and splenda. We haven't been munching on nuts much..WOOHOO! (it's a weakness for us) he enjoys the atkins bars... even though they are chocolate lol. i'm gonna head to target tomorrow...bc i heard they have more variety there! woohoo! Today is our ten yr wedding anniversary.. SOOOO... we are gonna cook ourselves a nice dinner. Kids are being treated to their favorite pizza...adn we are going to have a grilled rib eye.......w Wegmans Chipotle lime finishing butter... Fresh green beans w Wegmans Grlic n cheese finishing butter... and Dreamfields penne w homemade vodka sauce! MMMMMMMMMMMMMMM of COURSE i'll be updating and sharing pix later for that one!!! RE: Quit smoking monday 3/7/11............. and STILL NOT SMOOOOOOOOOOOKING! YEAYAH! i have been keepin myself soooooooooooo busy.. and do apologize for not updating yeeeeeeee blog :-/ beings today is our anniversary, and we have no funds to go out... and a cligy 4 yr old w us.. .we are gona spend the day relaxing.. doin our own things.. he'll prolly play COD, and I think i might actually take out the sewing machine, and sew! it's been a while........and he surprised w for my vday gift w kanani... so i think i might make something I started my seedlings btw!!!!! my front porch table is a lil green house now! i can't wait for everything to start sprouting... i have high hopes on the garden this year!!!! yesterday wasn't so bad
Fri 3/11 ............ wasn't the worst day, it's getting easier. I kept myself BUSY! i washed nearly every article of clothing in the house even if it was in a drawer.. bc... EVERYTHING smells like stale cigs to me.. and NO ONE EVER EVER EVER smoked in the house... figure that one out!
I was so busy running up and down the steps doing laundry all day... zipping around the house vaccuming,dusting,sorting clothes,putting them away.... every time i paused, THAT was when it hit that...oh crap... do i want to smoke? UM! NOOOOOOOOOO! it's been 5 days!!!! NO NO NO! sooo... i'd CHUG an ENTIRE bottle of water.... (lol.. running to the bathroom..and peeing.. hmm... quick sprints..and squats? ick..not even funny joke..OK..moving on)......... I must have had.... 8-9 bottles of water yesterday,,, i was too full to eat! HOWEVER... It all started in the am...
I had 2 left over oospie rolls... So, i made a breakfast sammy... porkroll,fried egg,and colby jack (never using colby jack on this again.. was Not a fan) PLUS... bc i'm dealing w emotional issues from quitting... i Really only had a few bites.. not that big of an appetite...

ooops i made'm again...
Hmm..earlier today.. Neen came over... i showed her how to make oopsie rolls, (i added shredded cheese n garlic) mmm... made Oopsie French Toast... Reeses style mousse and cheesecake... i don't remember if i made anything else.. BUT the goods were Great! OH! I also made chex mix flavored nuts w air popped popcorn. I'm not making anything for dinner tonight :*( But that's bc my mom wants to bring me out.. so, we are gonna go to salad works. I don't really feel like goin out anywhere today.. It's been a very rough day for me.. starting with the car from hell............... smelled like someone was burning electric cables under the hood... the engine light is on....... SERIOUSLY FOUL MOOD.. (from not smoking) it's finally kicking in.............. so, i took an anxiety pill, which helped a little. Still... i'm really sleepy... and cranky.. and i just don't wana go anywhere. but, it's hard to say no to my momma... it's been a long time since we went out, ya know? I like goin out.. but usually when we go out..we go to DPs and get a huge margarita...and chow down on chips and dp and stuff.... NOT THIS TIME :/ This is where Lc can be a bit of a downfall. It's really hard to get out and eat... you really have to be prepared in advance. I WISH more places would be more LC friendly.. like.. HOW ABOUT EVERYONE SELL DREAMFIELDS! how about EVeryone has the "sub w splenda" option? Flax bread vs white bread......... It bums me out...... bc it's SO easy to make that stuff here at home... but it's also nice to go out. I felt so bad yesterday.. mom sent me nutrinional info on the 2 places we might go to............ and i got SO MAD at the amount of CRAP/TRASH/POISON IN my fav foods.. that i responded with....:
id rather cook my own food. these ass crackin body poisoning jack offs are the reason most americans are fat huge... diabetic or worse. everything has added sugar breading grease...even the salad dressings.. its bull!! its reasons /places like these that make me wish i was tiny and had good dna. (meaning No diabetic genes... as im SUrrounded by it) Now, if i was full blown diabetic vs prediabetic... i'd be able to spit on all the people out there like ME NOW, and say HAHA Screw you Jen! Pass me the Sugar and beans pls... AND then stab myself w a lil insulin and call it a day. It's all BULLSHIT! def not fair. Am i a lil angry?? YES.. I'd say so!!!! it's not fair... It really isn't! AND .. diabetes isn't just a label with insulin pumps/needles... it's also.. potentionally fatal... ya loose limbs/fingers/toes... it's a 24/7 job to care for yourself.. i mean.. in the middle of the night.. say you're on a pump.... that thing starts beepin.. You better pray that you Hear it, so you can get up and fix it b4 ur knocked out and in some kinda shock. Needles to say, these are only Some of the many reasons i'm doin all i can to reverse my issues here... i don't wanna live my life like that. it just sucks is all.. bc i LOVE FOOD! BUT, i'm workin on makin LC food taste like normal food...and so far... so good. MAN! This withdrawl thing is pretty rough! lol i'm gonna go lay down for a while... I cant wait til all this is over with!

Day 1: Reward Meals!!! Rachel Ray's Thai Chicken Wraps- Modified for LC... DINNER TONIGHT!
over the next few days.. to two weeks, i'll be detoxing.. Since i quit smoking on MONDAY MORNING! :D:D:D:D:D:D I've decided.. w the extra money i have that's not being wasted on cancer sticks, i'm going to make something new each night... as a reward.... BUT.. I'm going to be taking other recipes that i find online and modify them (as well as making my own goods :D )
Yesterday, I made slow cooked pork... w full intentions of having carnitas.. minus the wrap... well, we never got around to eating it.. So.. i made my pork carnita salad today. :)

After I get the boys from the bus stop... i'm going to make rachel Ray's Thai Chicken wraps (modified) .......... then i'll be making peanut chicken for dinner :) here's the thai chicken wrap recipe! :: seeing this --> **** notes modifications ;)::
Ingredients
3 (6-ounce) chicken breasts
1 tablespoon soy sauce
1 tablespoon vegetable oil
1 tablespoon grill seasoning
Salad:
1/2 seedless cucumber, peeled, halved lengthwise and
thinly sliced on an angle
****2 cups fresh bean sprouts (OMITTING bc of LC)
*** 1 cup shredded carrots, available in pouches in
produce department (try for shredded lettuce... can't have carrots on induction)
3 scallions, sliced on an angle
12 leaves basil, chopped or torn
3 tablespoons chopped mint leaves (4 sprigs)
1 tablespoon sesame seeds
***2 teaspoons sugar (SPLENDA)
2 tablespoons rice wine vinegar or white vinegar
Salt
Spicy peanut sauce:
****1/4 cup room temperature chunky peanut butter,
soften in microwave if it has been refrigerated (I'm
using ALL NATURAL PEANUTBUTTER..ingred. Peanuts and Oil)
2 tablespoons soy sauce
1 tablespoon rice wine vinegar or white vinegar
1/4 teaspoon cayenne pepper
2 tablespoons vegetable oil
***4 (12-inch) flour tortilla wraps (using Carb friendly
wraps) Can Also use Lettuce leaves for even fewer carbs
Directions
Heat a grill pan over high heat. Toss chicken with soy
and oil and grill 6 minutes on each side.
Combine cucumber, sprouts, carrots, scallions, basil,
mint and sesame with a generous sprinkle of sugar and
vinegar. Season salad with salt, to taste.
Whisk peanut butter, soy sauce, vinegar and cayenne
together. Stream in vegetable oil.
Slice cooked chicken on an angle. Toss with veggies and
herbs.
In a very hot nonstick skillet or over a gas burner heat
tortillas 15 seconds on each side.
Pile chicken and veggies in wraps and drizzle liberally
with spicy peanut sauce before wrapping and rolling.

i added a lil VERY VERY VERY little curry to the chicken... and i simmered on stove til cooked and tender....

A menu idea of a week on LC
I made this for a friend... but here is a general idea of a good week... i tried to do simple recipes bc she's a busy mommy and wife..and she should be able to enjoy herself and not be stuck over a hot stove 24/7 ... this low carb thing is all about being healthy, and feuling your body with the right nutrition... have fun with it..and let your taste buds to the work ;)

(optional : SUGAR FREE seasoning ..anything you want!... roasted red bell pepper under the cheese)

Dinner: Chicken Breast... cubed... cooked in chicken broth (just enough to cook it through)
..... take chicken out... set aside.
add a LITTLE (like..1/8 tsp at a time) Xathan gum til you get a gravy... spice it up however you like if you want...
serve w tofu/Shirataki noodles OR cauli mashers...and a Green veggie :)

- TINY bit of Crushed tomato (best bet as far as carbs go.. besides .. you can spice it up to your own liking)
anyway, mix that in with your pasta... ...chop up some pepperoni or leave as is... OR brown up some spicey sausage.. or.. whatever meat you want (you dont HAVE to use meat.. just adds a nice touch)
****add veggies! you won't miss those nasty crap carbs if you allow your body the RIGHT carbs ;) TOP W MOZZERELLA OR any kinda cheese ya like :) i believe a serving of the pasta is 5 NC (Net Carbs)... so, as long as you didn't have any more than... 10 carbs all day... you can have 2 servings.. don't forget to count carbs in veggies!

well... it's Monday aka QUIT SMOKING AND BACK ON TRACK DAY!
which meaaaaaaaans... back at it..hard core.. lol. I just danced but arse off for over an hr w Dance Paradise for Kinects. Super Fun! last night i had a nasty cough ( i was chain smoking all weekend.. bc i knew i'd be done today.. ) so..YAY! quit day...been smoke free ... gonna do everything i can to keep it that way. Anyway.. last niguht iw as coughing A LOT.. and had a little fever.. never went over 100.. i was actually feelin slightly off saturday.. but tried to ignore it.. regardless of whatever it was.. it's Done. WOO! Needless to say, when i get fevers.. i'm usually Starving.. So, i ordered... got a cheesesteak turnover.. i only had a little of it... then fell asleep (EEK worst thing ever to do!).. anyway... Thismorning, i took all the goods out of the ever so thin "crust"... and plopped it all in a bowl.. and viola! breakfast.. my youngin enjoyed More than his share as well... Housed it actually! i was quite surprised! lol. hmm.. then i danced for a good hour and a half... i'm Bored.. this is the time i step out to smoke.. iNSTEAD... i chugged a bottle of water, had a sargento cheddar stick, cut up an atkins bar into 10 little cubes to snack on..and dished myself out 28 nuts (it's the serving size..works for me) THIS WAY,... to help stop the bad hand to mouth habit.. and KNOWING i'm a snacker esp when i quit smokiung... i have it Covered!
Now i need to think about what to do for lunch and dinner... i will say, i'm going to try to keep myself busy... so not to think about smoking.. (smoked from 3/1997- 3/6/2011!) yeah.. so... gonna be a challenge.. BUT i like challenges.. so LETS DO THIS THANG! I was thinking of making chicken "noodle" soup.. (with the tofu "noodles") but... not sure i can handle the smell of the stink at the moment. lol i guess i'll dig thru my fridge n freezers and see what i have. i'll update later :)
So i'm goin a lil crazy w the habit thing.... started lookin up recipes... bc i found coconut milk (sugar free) in my pantry. Found these recipes... look good.. HOWEVER.. I might make a coconut lime curry crab bisque instead... Not to sure yet.. I need to find my old cook book... bc i wrote the recipe in there Yeaaaaaaaaaaaars ago... and havn't made it in so long.
hamburger soup looks like something i might make tonight!

CHANDRAN'S CHICKEN CURRY
2 tablespoons oil
1 large onion, sliced thin, 5 1/4 ounces
2 teaspoons garlic, minced
2 teaspoons fresh ginger, grated
1 medium tomato, diced, 4 1/2 ounces
1/2 cup water
2 pounds boneless chicken thighs, cut in 1" cubes (see my comments below)
1/2 cup coconut milk
2 tablespoons fresh cilantro, chopped
Spice Mixture:
4 teaspoons ground coriander
1 teaspoon cumin
1/8 teaspoon turmeric
1/8-1/4 teaspoon cayenne
1/8 teaspoon pepper
1/8 teaspoon cinnamon
1/8 teaspoon cloves
1 teaspoon salt
1/4 teaspoon xanthan gum
Combine the spice mixture in a small bowl; set aside. Have all of the remaining ingredients chopped, measured and ready to add when needed. Heat the oil in a Dutch oven or wok. Cook the onion over medium heat until browned around the edges, about 7 minutes. Add the garlic and ginger; cook 1 minute. Add the spice mixture. Cook and stir 1 minute. Add the tomato and water. Cook over medium-low heat, stirring constantly, until the tomato has softened, about 2 minutes.
Add the chicken and simmer, uncovered, 15 minutes, stirring occasionally. Add the coconut milk and simmer 15 minutes or until the sauce thickens and the chicken is done. Stir in the cilantro. Serve over chopped iceberg lettuce or other vegetables, if desired.
Makes 4-6 servings

Per 1/6 Recipe: 175 Calories; 13g Fat; 11g Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs
3 tablespoons oil
2 tablespoons red Thai curry paste
1/2 teaspoon ground coriander
1/2 teaspoon cumin
3/4 cup skinless unsalted peanuts, 3 ounces *
13.5 ounce can coconut milk
2 tablespoons granular Splenda or equivalent liquid Splenda
2 tablespoons lime juice, 1 lime
1 teaspoon salt, or to taste
Grind the peanuts in a food processor until dry and crumbly but not quite to peanut butter consistency. Heat the oil in a large skillet; add the curry paste and fry on medium heat until fragrant, but do not let it burn. After about 30 seconds or so, whisk in the dry spices and fry briefly. Add all but the lime juice and salt and whisk until smooth. Bring to a boil and cook a few minutes until slightly thickened. Season to taste with the lime juice and salt. Serve warm as a dipping sauce with Chicken Satay.
Makes about 2 cups

* I could only find lightly salted peanuts, but they worked fine and I still added the full teaspoon of salt. I ground my peanuts until they were like a very thick, coarse peanut butter, but Chutatip says they should be more dry and crumbly. My sauce is still good, but next time I will try to get it the way she suggests.

THIS DISH WAS SOOOO GOOD! it had ALL the flavors, but was so light at the same time. I even put this on top of a piece of chicken i made later on. YUM! I'll be making this again.. but next time, i'll add more coconut and lime..

WHAT A WEEKEND!
*hides behind hands..peeks through fingers* I WAS BAAAAAAAAAAAAAD! i def had my share and then some of carbs over the weekend.. BUT in all fairness, it was my bday weekend... AND my parents and gram wanna bring me to a Mexican restraunt today... I def put on a few lbs.. not noticable (visually... unless you look at the number on the scale)... YES... Had major headaches..and tummy aches.. :( no.. it wasn't really worth it..i mean, it was at the time.. but not after the fact once the side effects kicked in.. i felt...
"toxic" almost. As for the bday dinner at the restraunt tonight... i'm gonna have a taco salad (no chips) w cilantro lime ranch dressing.. and diet soda and LOTS OF WATER! that's mainly where the lbs are.. SERIOUS water retention!!!! I'm gonna get right back on track today! AGAIN, everyone is only human... and although i said i'd be good... i couldn't help myself.. people brought so many yummy foods.. (i really didn't need to cook at all!) but i did.. oh well. Anyway, here's to a healthy Sunday.. back on track!

day 17... My scale gave me a present!
I'm down another 3.5 pounds!!!!!!!!!!!!!! i have so much to do today.. i'll be updting this thing frequently. first things first... drop the kiddos off at the bus stop... then hop in the kitchen .... to make........... jello shots... at 8am/ HA! nothin like the smell of Hot vodka to wake ya up i guess? o.0
last night my friend highlighted my hair... it looked really cute.. Wet... but today.. i look like someone dipped a Soaked.. cotton ball in a bucket of honey bee yellow paint.. Where did the caramel color go/// and WHY is my ENTIRE HEAD BLOND??!! eek... hopefully when i straighten it, the brown will come thru.

day 16....
HI!!! So, last night..after just dance2 for over an hr w the husband... he and i were very hungry...and tired... So, we ORDERED OUT!!!!!!!!!!!!!!!!!!! It was so yummy! and all allowable!

we both noticed how we filled up so quickly... w out over eating. it was actually kinda rewarding (and a lil What the heck??!) lol
I'm finishing up my shopping list for the grub tomorrow!!!!! I'm making
Hot Crap Dip...paula deen's recipe but i tweak it up a lil..add some old bay
Broccoli salad... (family recipe.) and calls for raisins and sugar SOOO not gonna eat that..BUT

to go with this... there will be Buffalo Chicken Dip
BUFFALO CHICKEN DIP
2 CANS (10 OZ) HORMEL CHUNK BREAST OF CHICKEN, DRAINED
2 PKGS (8 OZ) CREAM CHEESE
1 CUP RANCH DRESSING
1/4-1/3 C PEPPER SAUCE
1 1/2 C CHEDDAR CHEESE
Place cream cheese in shallow casserole. Microwave on 50% power until cheese is softened. 2 to 3 minutes. Stir in drained chicken, ranch dressing, pepper sause and 1 cup of the cheese. Sprinke top with remaining cheese. Microwave on 100% power 2 to 4 minutes, until hot and bubbly.
Makes 6 cups, 20 to 24 servings.
and Piccalillies and some wawa hoagies................ chips pretzels dips etc. Will be a fun time!@ i can't wait!!
OH!...and after cleaning the house today (after i get back from the store for a few odds and ends)... I will be giving myself a mini makeover! i can't WAIT for tomorrow!!!!YAYAYAYAYAYAYAAY! Pix will be posted :D

2 weeks of induction OVER...it's weigh in day.... Aaaaaaaaaand....
today is day 15 of induction (i'm going to continue to stay in this for a while..bc i have a decent amount to loose)..... Stilll.... Today was weigh in AND I'M DOWN 11 POUNDS!!!!!!!! It'd prolly be down more if i drank more water.. which, i'm confessing.. i haven't been doing such a great job with.,. but, i KNOW i'm retaining for.. erhm.. personal reasons as well.. Soooo... Time to get on that water bottle and chug like a college kid during pledge week! I am SO proud of myself for sticking to this!!!! It really wasn't that hard... not to mention (if you go back 2 weeks ago on my blog)... I HAVE to do this.. and that's totally fine with me. Again... I have so much more energy!... clothes are fitting better.. tummy's goin down... face isn't swollen/puffy anymore... Even my hair is shinier! I JUST FEEL HEALTHY! And, that says a lot in itself!
I'm not quite sure what i'll be making today..... but whatever it is... will be tasty, light, and healthy <3 To all my low carber friends out there... keep up the Great work!!!! Don't let that scale become your enemy... bc remember.. you might be retaining water.. ALSO.. keep in mind.. that even with low carb.. you still can't go overboard..bc Everything has calories... And drink Lots of water! Watch your caffeine and sodium... and just enjoy life. EAT TO LIVE! DON'T LIVE TO EAT!
