Day 1: Reward Meals!!! Rachel Ray's Thai Chicken Wraps- Modified for LC... DINNER TONIGHT!

over the next few days.. to two weeks, i'll be detoxing.. Since i quit smoking on MONDAY MORNING! :D:D:D:D:D:D   I've decided.. w the extra money i have that's not being wasted on cancer sticks, i'm going to make something new each night... as a reward....  BUT.. I'm going to be taking other recipes that i find online and modify them (as well as making my own goods :D  )


Yesterday, I made slow cooked pork... w full intentions of having carnitas.. minus the wrap... well, we never got around to eating it.. So.. i made my pork carnita salad today. :)


pork carnita salad... shredded lettuce,avacado,red onion,FRESH lime (and juice) sea salt lil cheddar jack,pork,cilantro,,garlic...
showing the natural pork juice that i used as dressing... dollop of sour cream... YUMMY!


*~*SNACK TIME!!!!   Oopsie  Rolls are AWESOME!!!!!  cant wait to get some burgers and chow down!! in the meantime.. enjoyin as french "toast" is just as nice!

oopsie roll... french toast version.. took the Finished Oopsie Rolls... tossed into a fryin pan that had a LITTLE melted butter and vanilla extract... sprinkled some splenda and cinnamon..............added a lil Sugar free Strawberry jelly (not pictured)  MUST get SF Syrup.  These were so easy and yummy!

  After I get the boys from the bus stop...  i'm going to make rachel Ray's Thai Chicken wraps (modified)  .......... then i'll be making peanut chicken for dinner :)   here's the  thai chicken wrap recipe!  :: seeing this --> **** notes modifications ;)::


Ingredients
3 (6-ounce) chicken breasts
1 tablespoon soy sauce
1 tablespoon vegetable oil
1 tablespoon grill seasoning
Salad:
1/2 seedless cucumber, peeled, halved lengthwise and

thinly sliced on an angle
****2 cups fresh bean sprouts (OMITTING bc of LC)
*** 1 cup shredded carrots, available in pouches in
produce department (try for shredded lettuce... can't have carrots on induction)
3 scallions, sliced on an angle
12 leaves basil, chopped or torn
3 tablespoons chopped mint leaves (4 sprigs)
1 tablespoon sesame seeds
***2 teaspoons sugar (SPLENDA)
2 tablespoons rice wine vinegar or white vinegar
Salt
Spicy peanut sauce:
****1/4 cup room temperature chunky peanut butter,

soften in microwave if it has been refrigerated (I'm

using ALL NATURAL PEANUTBUTTER..ingred. Peanuts and Oil)
2 tablespoons soy sauce
1 tablespoon rice wine vinegar or white vinegar
1/4 teaspoon cayenne pepper
2 tablespoons vegetable oil
***4 (12-inch) flour tortilla wraps (using Carb friendly

wraps)  Can Also use Lettuce leaves for even fewer carbs

Directions
Heat a grill pan over high heat. Toss chicken with soy

and oil and grill 6 minutes on each side.

Combine cucumber, sprouts, carrots, scallions, basil,

mint and sesame with a generous sprinkle of sugar and

vinegar. Season salad with salt, to taste.

Whisk peanut butter, soy sauce, vinegar and cayenne

together. Stream in vegetable oil.

Slice cooked chicken on an angle. Toss with veggies and

herbs.

In a very hot nonstick skillet or over a gas burner heat

tortillas 15 seconds on each side.

Pile chicken and veggies in wraps and drizzle liberally

with spicy peanut sauce before wrapping and rolling.

*~*~*so i tweaked the recipe a lil more... heh

i added a lil VERY VERY VERY little curry to the chicken... and i simmered on stove til cooked and tender....
le salad.,.. a mix of shredded lettuce fresh-mint basil cut cucumbers and scallions... w a rice wine vinegar n lime reduction
topped the chicken over it,... layered some cucumber and mint sprigs.. bc..well... it's prettier that way! lol
           I added a SMALL amount of lime juice to the rice wine vinegar... i think it acents the mint flavor. I'll be making the peanut sauce when it closer to eating time once my friend gets here... and i'll pour the saue over my chicken..and snap another pic of the final product ;) in the meantime.. here's a teaser..
